Every Color Veggie & Bean Hodgepodge Bowl

White Beans, Sweet Potato, Cabbage, Summer Squash, and Spinach

For when you’re feelin’ kinda funky. And by funky I mean “have a buttload of random stuff and nothing constructive to make.” That’s what I mean.

• 1 small sweet potato, diced finely
• 1/2 small head of cabbage, chopped
• 1 small yellow summer squash, chopped
• 1 Tablespoon olive oil
• 2 cups spinach
• 1/2 can Cannellini beans
• 1/2 teaspoon pepper
• 1/2 teaspoon salt, or to taste
• 2 teaspoons apple cider vinegar
• 1 Tablespoon honey or maple syrup

Combine sweet potato, cabbage, summer squash, olive oil, and a pinch of salt and pepper in a skillet. Cook 6-7 minutes, stirring often, until the sweet potato is soft. Add the remaining ingredients and sauté 3-4 minutes until the spinach is wilted and the beans are warmed. Serve hot over a handful of fresh greens !
